Hibachi Chicken & Veggies with Fried Rice

Hibachi chicken and veggies with fried rice is a delicious and popular Japanese-inspired dish often prepared on a flat iron griddle, known as a hibachi grill. Here’s a simple recipe to make it at home:

Ingredients:

For the Hibachi Chicken:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

For the Veggies:

  • 2 cups mixed vegetables (such as onions, bell peppers, zucchini, mushrooms, broccoli)
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

For the Fried Rice:

  • 2 cups cooked rice (preferably day-old rice)
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1/2 cup diced carrots and peas (optional)
  • Salt and pepper to taste

Instructions:

Hibachi Chicken:

  1. In a bowl, combine soy sauce, vegetable oil, sesame oil, minced garlic, minced ginger, salt, and pepper.
  2. Add sliced chicken to the marinade and toss to coat evenly. Let it marinate for at least 30 minutes in the refrigerator.
  3. Heat a skillet or grill pan over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 6-8 minutes, stirring occasionally. Remove from heat and set aside.

Veggies:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add mixed vegetables to the skillet and stir-fry for about 5-7 minutes until they are tender yet crisp.
  3. Season with soy sauce, salt, and pepper. Stir well to combine. Remove from heat and set aside.

Fried Rice:

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add beaten eggs to the skillet and scramble until cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add cooked rice and stir-fry for a few minutes until heated through and slightly crispy.
  4. Add diced carrots and peas (if using) and stir-fry for another 2-3 minutes.
  5. Return the scrambled eggs to the skillet. Add soy sauce, salt, and pepper. Stir well to combine all the ingredients. Cook for an additional 2-3 minutes.
  6. Remove from heat.

Serving:

  1. Serve the hibachi chicken and veggies alongside the fried rice.
  2. Optionally, garnish with chopped green onions or sesame seeds for added flavor and presentation.
