Herb-crusted chicken is a delicious and flavorful dish that features chicken coated in a mixture of herbs and breadcrumbs, then baked or roasted to perfection. Here’s a simple recipe for herb-crusted chicken:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs (you can use Panko for extra crispiness)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Olive oil for brushing

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow dish, combine the breadcrumbs, Parmesan cheese, chopped parsley, thyme, rosemary, garlic powder, salt, and pepper. Mix well.
  3. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with the herb and breadcrumb mixture.
  4. Dredge each chicken breast in the flour, shaking off any excess.
  5. Dip the chicken into the beaten eggs, ensuring it is fully coated.
  6. Press the chicken into the herb and breadcrumb mixture, making sure the coating sticks to all sides.
  7. Place the coated chicken breasts on a baking sheet lined with parchment paper.
  8. Drizzle or brush olive oil over the top of each chicken breast to help achieve a golden and crispy crust.
  9. Bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through and the crust is golden brown and crispy.
  10. Remove from the oven and let it rest for a few minutes before serving.
