Healthy Yogurt Clusters

Creating healthy yogurt clusters is a delicious and nutritious way to enjoy a snack or add a crunchy topping to your yogurt or smoothie bowl. Here’s a simple recipe for homemade healthy yogurt clusters:

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup chopped nuts (almonds, walnuts, or your choice)
  • 1/4 cup seeds (pumpkin seeds, sunflower seeds, chia seeds, or flaxseeds)
  • 1/4 cup honey or maple syrup
  • 1/4 cup nut butter (almond butter, peanut butter, or your preference)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • Pinch of salt
  • 1 cup Greek yogurt (for coating)

Instructions:

  1. Preheat Oven: Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped nuts, seeds, and cinnamon. Mix well.
  3. Prepare Wet Ingredients: In a small saucepan, heat the honey (or maple syrup), nut butter, vanilla extract, and a pinch of salt over low heat. Stir until the mixture is well combined and smooth.
  4. Combine Wet and Dry Ingredients: Pour the wet mixture over the dry ingredients and mix until everything is evenly coated.
  5. Create Clusters: Scoop small clusters of the mixture and place them on the prepared baking sheet. You can use your hands or a spoon to shape them into clusters.
  6. Bake: Bake in the preheated oven for about 15-20 minutes or until the clusters turn golden brown. Be sure to stir them halfway through the baking time for even cooking.
  7. Cool: Allow the clusters to cool completely on the baking sheet. They will harden as they cool.
  8. Coat with Yogurt: Once the clusters have cooled, gently toss them in a bowl with Greek yogurt until they are coated.
  9. Serve or Store: Serve the yogurt clusters as a snack or sprinkle them on top of your yogurt or smoothie bowl. Store any leftovers in an airtight container.
