Healthy Tofu Red Curry

Certainly! Here’s a recipe for a healthy tofu red curry:

Ingredients:

  • 1 block of firm tofu, pressed and cubed
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 2 bell peppers, sliced
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 ounces) coconut milk (use light coconut milk for a lighter option)
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce (or tamari for a gluten-free option)
  • 1 tablespoon maple syrup or agave nectar
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish
  • Cooked brown rice or quinoa for serving

Instructions:

  1. Press the tofu: Wrap the block of tofu in a clean kitchen towel and place a heavy object on top (like a pan or a can). Let it sit for at least 15-20 minutes to press out excess water. Once pressed, cut the tofu into cubes.
  2. Heat the oil in a large skillet or wok over medium heat. Add the cubed tofu and cook until golden brown on all sides. Remove tofu from the pan and set aside.
  3. In the same pan, add a bit more oil if needed. Sauté the sliced onion until it becomes translucent.
  4. Add the minced garlic and grated ginger, and sauté for another 1-2 minutes until fragrant.
  5. Stir in the red curry paste and cook for a minute, allowing the flavors to meld.
  6. Add the sliced bell peppers and julienned carrots to the pan. Cook for a few minutes until the vegetables begin to soften.
  7. Pour in the coconut milk and vegetable broth. Stir well to combine.
  8. Add the cooked tofu back to the pan. Season with soy sauce, maple syrup (or agave nectar), lime juice, salt, and pepper. Stir gently to coat the tofu and vegetables in the curry sauce.
  9. Simmer the curry for about 10-15 minutes, allowing the flavors to meld and the vegetables to cook through.
  10. Taste and adjust the seasoning if needed. If you prefer a spicier curry, you can add more red curry paste.
  11. Serve the healthy tofu red curry over cooked brown rice or quinoa. Garnish with fresh cilantro leaves.
