Healthy pickled beets are a tasty and nutritious addition to your diet. Here’s a simple recipe for pickled beets:

Ingredients:

  • 3 to 4 medium-sized beets, peeled and sliced
  • 1 cup white vinegar
  • 1 cup water
  • 1/2 cup sugar (adjust to taste)
  • 1 teaspoon salt
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander seeds
  • Optional: 1-2 cloves of garlic (sliced)
  • Optional: Fresh herbs like dill or thyme

Instructions:

  1. Prepare the Beets:
    • Wash and peel the beets. Slice them into thin rounds or julienne strips, depending on your preference.
  2. Boil the Beets:
    • In a pot of boiling water, cook the beets until they are just tender. This usually takes about 10-15 minutes. You can test the tenderness by inserting a fork into a beet slice.
  3. Make the Pickling Liquid:
    • In another pot, combine the white vinegar, water, sugar, salt, black peppercorns, mustard seeds, and coriander seeds. Bring the mixture to a boil, then reduce the heat and let it simmer for 5-7 minutes.
  4. Add Flavor (Optional):
    • If you like, add sliced garlic or fresh herbs like dill or thyme to the pickling liquid. Let it simmer for an additional 2-3 minutes.
  5. Assemble the Jars:
    • Pack the cooked beets into sterilized jars. Pour the hot pickling liquid over the beets, making sure they are completely covered.
  6. Cool and Seal:
    • Allow the jars to cool to room temperature before sealing them. Once cool, store the jars in the refrigerator.
  7. Marinate (Optional):
    • For the best flavor, let the beets marinate in the pickling liquid for at least 24 hours before consuming.
  8. Serve:
    • Enjoy your homemade pickled beets on salads, as a side dish, or as a tasty snack.

Remember to adjust the sugar and salt levels to suit your taste preferences. This recipe is flexible, so feel free to experiment with different herbs and spices to create your ideal pickled beets.
