Ingredients:

For the base:

  • 1 cup natural peanut butter (or any nut/seed butter)

  • 1/2 cup maple syrup or honey

  • 2 cups crispy rice cereal (look for brown rice cereal for a healthier option)

  • 1/4 teaspoon salt (if peanut butter is unsalted)

  • 1 teaspoon vanilla extract

For the chocolate topping:

  • 1/2 cup dark chocolate chips (or chopped dark chocolate)

  • 1 tablespoon coconut oil (optional, for a smoother topping)


Instructions:

  1. Line a pan (8×8 or 9×9 inches) with parchment paper.

  2. In a medium saucepan over low heat, warm the peanut butter and maple syrup together, stirring until smooth and well combined. Remove from heat and stir in vanilla and salt if using.

  3. Gently fold in the crispy rice cereal, making sure it’s all evenly coated.

  4. Press the mixture firmly into the prepared pan. Use a spatula or your hands (lightly greased or with parchment) to press it down evenly and tightly.

  5. For the topping, melt the chocolate chips and coconut oil together in a microwave (30-second bursts) or on the stovetop using a double boiler. Stir until smooth.

  6. Pour the melted chocolate over the peanut butter layer, spreading evenly with a spatula.

  7. Chill in the refrigerator for about 1 hour, or until set.

  8. Slice into bars and enjoy! Store in the fridge for up to a week or freeze for longer.
