Hawaiian BBQ Chicken and Pineapple Foil Packets are a delicious and easy-to-make meal, perfect for grilling or baking. The sweet and savory combination of BBQ chicken, pineapple, and spices in a foil packet creates a flavorful, juicy dish with minimal cleanup. Here’s a simple recipe for you to try:

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 cup BBQ sauce (your choice of flavor)

  • 1 can (8 oz) pineapple chunks (drained), or fresh pineapple (cut into chunks)

  • 1 red bell pepper (sliced)

  • 1/2 red onion (sliced)

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • Fresh cilantro (optional, for garnish)

  • 4 large pieces of aluminum foil (for wrapping)

Instructions:

  1. Prepare the chicken:

    • Preheat your grill or oven to 375°F (190°C).

    • Season each chicken breast with salt, pepper, garlic powder, and paprika. Rub with a little olive oil to coat evenly.

  2. Assemble the foil packets:

    • Lay out 4 large sheets of aluminum foil (each large enough to wrap a chicken breast and the veggies).

    • Place one chicken breast in the center of each piece of foil.

    • Top the chicken with about 1/4 cup of BBQ sauce, then add a handful of pineapple chunks, a few slices of red bell pepper, and a few slices of red onion.

  3. Seal the packets:

    • Fold up the sides of the foil over the chicken and ingredients, and then fold the ends tightly to create a sealed packet. This will trap all the juices inside.

  4. Cook the packets:

    • Place the foil packets on the grill or in the oven (on a baking sheet if using the oven). Grill for about 25-30 minutes, or bake for 30-35 minutes, depending on the size of the chicken breasts. Check the internal temperature to make sure it reaches 165°F (75°C).

  5. Serve:

    • Carefully open the foil packets (watch out for steam!). Serve the chicken directly from the packet or transfer to plates.

    • Garnish with fresh cilantro if desired and enjoy!

Tips:

  • For added flavor, you can marinate the chicken in BBQ sauce for 30 minutes to an hour before assembling the foil packets.

  • You can also add other veggies like zucchini, mushrooms, or corn to the packet for a more complete meal.

  • If you’re making these for a crowd, double or triple the recipe accordingly.
