Here’s a Hamburger Macaroni and Cheese recipe that combines ground beef, pasta, and creamy cheese sauce for a comforting, hearty dish — like a mashup of Hamburger Helper and mac ‘n cheese, but homemade and better!


🍲 Hamburger Macaroni and Cheese

🕒 Ready in 30 minutes | 🍽 Serves 4–6


Ingredients:

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 cups elbow macaroni (or any short pasta)

  • 2 cups milk (whole or 2%)

  • 1 cup beef broth (or water with bouillon)

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 2 ½ cups shredded cheddar cheese (divided)

  • ½ tsp paprika

  • ½ tsp mustard powder (optional, for extra flavor)

  • Salt & pepper, to taste

  • Fresh parsley or green onions (optional garnish)


Instructions:

  1. Cook pasta:
    In a large pot, cook the macaroni according to package directions until al dente. Drain and set aside.

  2. Brown the beef:
    In the same pot or a large skillet, cook ground beef over medium heat until browned. Drain excess fat.

  3. Sauté aromatics:
    Add the diced onion and garlic to the beef and cook for 2–3 minutes until softened.

  4. Make the roux:
    Push the meat to one side of the pan. Melt butter in the empty space, then sprinkle in the flour. Stir constantly for 1–2 minutes until a paste forms and begins to turn golden.

  5. Add liquids:
    Gradually whisk in the milk and beef broth, stirring to combine with the roux. Mix everything together with the beef.

  6. Make it cheesy:
    Bring to a gentle simmer and cook for 4–5 minutes, until thickened slightly. Stir in 2 cups of the shredded cheese, paprika, and mustard powder. Mix until smooth.

  7. Combine:
    Add the cooked macaroni back into the pot and stir to coat evenly with the cheese sauce. Taste and adjust seasoning with salt and pepper.

  8. Optional step – broil for cheesy top:
    If you want a baked finish, transfer the mixture to a baking dish, sprinkle with remaining ½ cup cheese, and broil for 2–3 minutes until bubbly and golden.

  9. Serve:
    Garnish with chopped parsley or green onions if desired. Serve hot!

  • Make it spicy: Add red pepper flakes or chopped jalapeños.

  • Add veggies: Stir in peas, diced tomatoes, or bell peppers.

  • Use different cheese: Try Monterey Jack, mozzarella, or pepper jack for variety.

  • Swap meat: Use ground turkey or sausage for a different flavor.
