Ground Beef and Vegetable Soup

Ground beef and vegetable soup sounds delicious and hearty! Here’s a simple recipe for you:

Ingredients:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 medium potatoes, diced
  • 1 zucchini, chopped (optional)
  • 1 cup frozen peas (or fresh if you prefer)
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 4 cups beef broth (or chicken broth)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

  1. Brown the beef: In a large pot, heat a tablespoon of olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat if necessary.
  2. Sauté the vegetables: Add the chopped onion and garlic to the pot with the beef. Cook for 2-3 minutes, until the onions are soft.
  3. Add the remaining veggies: Stir in the carrots, celery, potatoes, and zucchini. Cook for another 5 minutes, stirring occasionally.
  4. Simmer the soup: Add the diced tomatoes (with juice), beef broth, thyme, oregano, salt, and pepper. Stir to combine. Bring to a boil, then reduce heat and let it simmer for about 30 minutes, or until the vegetables are tender.
  5. Finish up: Stir in the frozen peas (or fresh peas) and cook for another 5 minutes.
  6. Taste and adjust: Give the soup a taste, and adjust the seasonings as needed.

Serve it up warm with some crusty bread for a cozy meal! You can also add other vegetables or spices based on your taste preferences. Enjoy!
