Grilled Chicken Margherita

Grilled Chicken Margherita is a delicious and flavorful dish that combines the classic flavors of a Margherita pizza with grilled chicken. Here’s a simple recipe for you to try:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 2 teaspoons garlic powder
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella cheese, sliced
  • Fresh basil leaves, for garnish

For Balsamic Glaze:

  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey or maple syrup

Instructions:

  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts with salt, pepper, oregano, basil, and garlic powder. Drizzle olive oil over the chicken to coat evenly.
  3. Grill the chicken for about 6-8 minutes per side or until it reaches an internal temperature of 165°F (74°C).
  4. In the last couple of minutes of grilling, add the halved cherry tomatoes to the grill to lightly char them.
  5. While the chicken is cooking, prepare the balsamic glaze. In a small saucepan, combine balsamic vinegar and honey or maple syrup. Bring to a simmer over medium heat, then reduce the heat to low and simmer for 8-10 minutes or until the glaze has thickened.
  6. Once the chicken is cooked, top each breast with grilled cherry tomatoes and fresh mozzarella slices.
  7. Close the grill lid and let the cheese melt for 2-3 minutes.
  8. Remove the chicken from the grill and drizzle with the balsamic glaze.
  9. Garnish with fresh basil leaves and serve immediately.
