🌿 Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce

🥣 Ingredients

For the Bowls:

  • 2 boneless skinless chicken breasts (or thighs), halved horizontally

  • 2 cups broccoli florets

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 1 cup cooked rice or quinoa

  • Optional toppings: cherry tomatoes, avocado, sesame seeds, chopped green onions

For the Marinade:

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 2 garlic cloves, minced

  • 1 tsp paprika

  • ½ tsp dried oregano

  • Salt & pepper to taste

For the Creamy Garlic Sauce:

  • ½ cup plain Greek yogurt or sour cream

  • 2 tbsp mayonnaise

  • 2 cloves garlic, finely minced or grated

  • 1 tbsp lemon juice

  • 1–2 tbsp milk or water (to thin)

  • Salt & pepper to taste


🔥 Instructions

  1. Marinate the Chicken:

    • Mix marinade ingredients in a bowl. Add chicken and toss to coat.

    • Cover and refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).

  2. Cook the Chicken:

    • Grill chicken on a hot grill or skillet for 4–5 minutes per side, until cooked through and nicely charred.

    • Rest for a few minutes, then slice.

  3. Cook the Broccoli:

    • Toss broccoli in olive oil, salt, and pepper.

    • Grill or roast at 400°F (200°C) for 12–15 minutes until tender-crisp and lightly charred.

  4. Make the Creamy Garlic Sauce:

    • Whisk together all sauce ingredients in a bowl. Adjust consistency with milk or water.

  5. Assemble the Bowls:

    • Start with a scoop of rice or quinoa.

    • Top with grilled chicken slices, roasted broccoli, and optional extras.

    • Drizzle generously with creamy garlic sauce.
