Green shakshuka is a delicious variation of the classic shakshuka dish, typically made with tomatoes and eggs. In green shakshuka, the tomato base is replaced with a vibrant mixture of green vegetables and herbs, resulting in a fresh and flavorful dish. Here’s a basic recipe to get you started:

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 jalapeño pepper, seeded and diced (optional, for heat)
  • 4 cups fresh spinach leaves, chopped
  • 2 cups kale leaves, chopped
  • 1 cup fresh parsley leaves, chopped
  • 1 cup fresh cilantro leaves, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • 4-6 large eggs
  • Crumbled feta cheese (optional, for garnish)
  • Sliced green onions (optional, for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, diced green bell pepper, and diced jalapeño pepper (if using). Cook for another 2-3 minutes until the peppers are slightly softened.
  3. Stir in the chopped spinach and kale leaves. Cook until wilted, about 2-3 minutes.
  4. Add the chopped parsley and cilantro to the skillet, along with the ground cumin and coriander. Season with salt and pepper to taste. Stir everything together and cook for another 2-3 minutes to allow the flavors to meld.
  5. Using a spoon, create small wells in the vegetable mixture for the eggs. Crack the eggs directly into the wells. Season the eggs with a little more salt and pepper.
  6. Cover the skillet and let the eggs cook until the whites are set but the yolks are still runny, about 5-7 minutes. If you prefer firmer yolks, cook for a few minutes longer.
  7. Once the eggs are cooked to your liking, remove the skillet from heat. Sprinkle crumbled feta cheese and sliced green onions on top for extra flavor and garnish.
  8. Serve the green shakshuka hot, straight from the skillet, with crusty bread or pita on the side for dipping.
