Here’s a flavorful Green Chile Queso Fundido with Chorizo recipe that’s gooey, spicy, and perfect for dipping with warm tortillas or chips. It’s a hit at parties or as a hearty appetizer.


🌶️ Green Chile Queso Fundido with Chorizo

🧀 Ingredients:

  • 1/2 lb (about 225g) Mexican chorizo (casings removed)

  • 1 tbsp olive oil (if needed)

  • 1/2 small onion, finely diced

  • 2 cloves garlic, minced

  • 1 cup roasted green chiles, chopped
    (Use Hatch green chiles if available; canned or fresh-roasted)

  • 2 cups shredded melting cheese
    (e.g., Oaxaca, Monterey Jack, Mozzarella, or a blend)

  • 1/4 tsp cumin (optional, for extra depth)

  • Salt and pepper, to taste

  • Cilantro, chopped (for garnish)

  • Tortilla chips or warm flour tortillas, for serving


🔥 Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Cook the chorizo:
    In an oven-safe skillet (like cast iron), cook the chorizo over medium heat until browned and fully cooked, about 5–7 minutes. Use a spoon to break it up. Remove excess grease if necessary but leave a bit for flavor.

  3. Sauté aromatics:
    Add diced onion to the skillet with the chorizo and cook 2–3 minutes until soft. Add garlic and cook another 30 seconds until fragrant.

  4. Add green chiles:
    Stir in the chopped green chiles and cumin. Cook for 1–2 minutes to blend the flavors.

  5. Layer the cheese:
    Sprinkle the shredded cheese evenly over the chorizo-green chile mixture.

  6. Bake:
    Transfer the skillet to the preheated oven. Bake for about 10–12 minutes, or until the cheese is fully melted and bubbling.

  7. Optional broil:
    For a golden top, broil on high for 1–2 minutes—just until the cheese gets a light crust.

  8. Garnish and serve:
    Sprinkle with chopped cilantro and serve hot with tortilla chips or warm tortillas.
