Ingredients:

  • 1 beef shoulder roast (about 3-4 pounds)
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lemon
  • 1/2 cup beef broth or red wine (optional)
  • Lemon wedges, for serving
  • Fresh herbs for garnish (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 325°F (165°C).
  2. Prepare the marinade: In a small bowl, mix together the minced garlic, olive oil, dried oregano, thyme, rosemary, salt, pepper, and lemon juice to form a paste.
  3. Marinate the beef: Rub the marinade all over the beef shoulder roast, making sure to coat it evenly. You can let it marinate for at least 30 minutes or overnight in the refrigerator for more flavor.
  4. Roast the beef: Place the marinated beef shoulder roast in a roasting pan or a baking dish. If you like, you can add beef broth or red wine to the bottom of the pan for extra moisture. Cover the pan with aluminum foil.
  5. Cooking: Roast the beef in the preheated oven for about 3 to 4 hours, or until the meat is tender and can be easily shredded with a fork. You can remove the foil during the last 30 minutes of cooking to allow the top to brown if desired.
  6. Resting: Once the beef is cooked to your liking, remove it from the oven and let it rest for about 10-15 minutes before slicing. This allows the juices to redistribute, ensuring a moist and flavorful roast.
