Ingredients:

For the Chicken:

  • 2 chicken breasts (or thighs)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Juice of 1 lemon

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1 cucumber, finely grated or diced
  • 1-2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • 1 tbsp lemon juice
  • Salt and pepper to taste

For the Bowl:

  • 1 cup cooked quinoa or brown rice (or another base of your choice)
  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup feta cheese, crumbled
  • 1/2 red onion, thinly sliced
  • Cherry tomatoes, halved (optional)
  • Kalamata olives (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:
    • In a small bowl, combine the olive oil, oregano, garlic powder, paprika, lemon juice, salt, and pepper.
    • Coat the chicken breasts in the marinade and let it sit for at least 15 minutes (or up to 2 hours for more flavor).
    • Heat a grill pan or skillet over medium heat. Cook the chicken for 6-7 minutes per side or until fully cooked through (internal temperature should reach 165°F / 74°C). Let the chicken rest for a few minutes before slicing it into strips or bite-sized pieces.
  2. Make the Tzatziki Sauce:
    • In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, salt, and pepper.
    • Stir well to combine. Taste and adjust the seasoning if necessary. Chill in the fridge until ready to serve.
  3. Assemble the Bowl:
    • Start with a base of quinoa or rice in each bowl.
    • Top with chickpeas, sliced chicken, feta cheese, red onion, tomatoes, and olives (if using).
    • Drizzle with the tzatziki sauce and garnish with fresh parsley.
  4. Serve and Enjoy:
    • Serve the Greek chicken bowls with a lemon wedge on the side, and enjoy a flavorful and healthy meal!

This recipe is customizable, so feel free to add or substitute your favorite veggies, grains, or proteins!
