Greek Avocado Chicken Salad is a delicious and nutritious dish combining the creamy richness of avocado with the freshness of Greek flavors. Here’s a simple recipe to make it:

Ingredients:

  • 2 cooked chicken breasts, shredded or diced
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Prepare the Chicken: Cook chicken breasts until no longer pink in the center, either by grilling, baking, or boiling. Allow them to cool, then shred or dice the chicken.
  2. Prepare the Salad: In a large mixing bowl, combine the shredded or diced chicken, diced avocado, halved cherry tomatoes, diced cucumber, thinly sliced red onion, sliced Kalamata olives, crumbled feta cheese, and chopped fresh parsley.
  3. Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, lemon juice, dried oregano, salt, and pepper.
  4. Combine: Pour the dressing over the salad ingredients.
  5. Mix Well: Gently toss the salad until all the ingredients are evenly coated with the dressing.
  6. Serve: Transfer the salad to serving plates or bowls and serve immediately.
  7. Optional Additions: You can customize this salad by adding additional ingredients such as chopped bell peppers, sliced cucumbers, or cooked quinoa for added texture and flavor.
