Golden Garlic Chicken Bites:

Ingredients:

  • 2 boneless, skinless chicken breasts (cut into bite-sized cubes)
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 large egg (beaten)
  • 1/2 cup breadcrumbs (preferably panko for crunch)
  • 2 tablespoons olive oil (or vegetable oil) for frying
  • 3 cloves garlic (minced)
  • 2 tablespoons butter

Instructions:

  1. Prepare Chicken Bites: In a bowl, combine the flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. In another bowl, whisk the egg, and in a third bowl, add the breadcrumbs.
  2. Coat the Chicken: Dip each piece of chicken first in the flour mixture, then in the egg, and finally coat in the breadcrumbs. Set aside on a plate.
  3. Cook Chicken: Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken bites and cook for about 4-5 minutes per side until golden brown and crispy. Remove and set aside.
  4. Garlic Butter: In the same skillet, melt the butter and sauté the minced garlic until fragrant (about 1 minute). Return the chicken bites to the skillet, toss to coat them in the garlic butter, and keep warm.

Creamy Parmesan Pasta:

Ingredients:

  • 8 oz fettuccine or your preferred pasta
  • 2 tablespoons butter
  • 1 clove garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley or basil (optional for garnish)

Instructions:

  1. Cook Pasta: Cook the pasta according to package instructions. Drain, reserving about 1/4 cup of pasta water.
  2. Make the Creamy Sauce: In the same pot, melt the butter over medium heat. Add the garlic and sauté until fragrant (about 1 minute).
  3. Add Cream and Cheese: Pour in the heavy cream, and bring to a simmer. Stir in the Parmesan cheese and cook, whisking occasionally, until the sauce thickens (about 3-4 minutes).
  4. Season: Add salt and pepper to taste. If the sauce is too thick, add a little of the reserved pasta water to reach your desired consistency.
  5. Combine Pasta and Sauce: Toss the cooked pasta in the creamy Parmesan sauce, coating it well. If needed, add more pasta water to make the sauce smoother.

To Assemble:

  1. Place a generous portion of the creamy Parmesan pasta onto each plate.
  2. Top with the golden garlic chicken bites.
  3. Optionally, garnish with fresh parsley or basil for color.
  4. Serve with extra Parmesan cheese on the side for added richness.
