Gluten-Free Sandwich Bread

Certainly! Here’s a basic recipe for gluten-free sandwich bread:

Ingredients:

  • 2 cups gluten-free all-purpose flour blend
  • 1 teaspoon xanthan gum (omit if your flour blend already contains it)
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 1/4 cups warm water (about 110°F)
  • 2 large eggs
  • 2 tablespoons olive oil or melted butter

Instructions:

  1. In a large mixing bowl, whisk together the gluten-free flour blend, xanthan gum (if needed), salt, and sugar.
  2. In a separate small bowl, mix the warm water and yeast. Let it sit for about 5 minutes until frothy.
  3. Add the yeast mixture, eggs, and olive oil (or melted butter) to the dry ingredients. Mix until well combined. The dough will be thick and sticky.
  4. Grease a 9×5-inch loaf pan and spoon the dough into it, smoothing the top with a spatula.
  5. Cover the loaf pan with a clean kitchen towel and let it rise in a warm place for about 30-45 minutes, or until the dough has risen to the top of the pan.
  6. While the dough is rising, preheat your oven to 350°F (175°C).
  7. Once the dough has risen, bake the bread in the preheated oven for 35-40 minutes, or until it’s golden brown and sounds hollow when tapped on the bottom.
  8. Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
  9. Once cooled, slice the bread and use it for sandwiches or toast. Store any leftovers in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
