Ingredients:
- 1 pound (450g) shrimp, peeled and deveined
- 10 ounces (300g) pasta (penne, rigatoni, or any shape you prefer)
- 4 cloves garlic, minced
- 1/4 cup (60ml) olive oil
- 1 cup (240ml) heavy cream
- 1 cup (240ml) chicken or vegetable broth
- 1/2 cup (50g) grated Parmesan cheese
- 1 cup (100g) shredded mozzarella cheese
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 375°F (190°C).
- Cook the pasta according to the package instructions until it’s al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.
- Add the shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, pour in the heavy cream and chicken or vegetable broth. Bring the mixture to a simmer.
- Stir in the grated Parmesan cheese until it’s melted and the sauce has thickened slightly.
