Garlic Parmesan Crusted Salmon with Asparagus is a delicious and easy-to-make dish. Here’s a simple recipe for you to try:

Ingredients:

For the Salmon:

  • 4 salmon fillets (skin-on or skinless, based on preference)
  • 3 tablespoons olive oil
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon breadcrumbs (panko works best for extra crispiness)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 teaspoon lemon zest (optional)

For the Asparagus:

  • 1 bunch of asparagus, trimmed
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder or minced garlic (optional)

Instructions:

For the Salmon:

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the garlic Parmesan crust: In a small bowl, mix together the Parmesan cheese, breadcrumbs, minced garlic, parsley, lemon zest (if using), and a pinch of salt and pepper.
  3. Prepare the salmon fillets: Pat the salmon fillets dry with paper towels. Drizzle with olive oil and season with salt and pepper.
  4. Coat the salmon: Press the garlic Parmesan mixture evenly on top of the fillets, pressing gently so the coating sticks.
  5. Bake the salmon: Place the salmon fillets on a baking sheet lined with parchment paper or foil. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and the crust is golden brown.

For the Asparagus:

  1. Prepare the asparagus: While the salmon is baking, prepare the asparagus. Trim off the tough ends.
  2. Season and bake: Toss the asparagus with olive oil, salt, pepper, and garlic powder (if using). Place it on the same baking sheet (or another) and bake for 10-12 minutes, or until tender and slightly crispy on the edges. If you want a little extra flavor, squeeze a bit of lemon juice over the asparagus before serving.

To Serve:

Plate the salmon with the roasted asparagus on the side. Garnish with extra parsley or lemon wedges, if desired.

Tips:

  • You can broil the salmon for the last 2-3 minutes for an extra crispy crust.
  • To make the asparagus extra flavorful, you can sprinkle it with Parmesan cheese or a drizzle of balsamic glaze after baking.
