Here’s a delicious recipe for Garlic Herb Roasted Veggies – a simple, healthy side dish packed with flavor:


Garlic Herb Roasted Veggies

🥕 Ingredients:

  • 1 cup broccoli florets

  • 1 cup cauliflower florets

  • 1 red bell pepper, chopped

  • 1 zucchini, sliced

  • 1 red onion, chopped

  • 2 carrots, peeled and sliced

  • 3 tablespoons olive oil

  • 4 garlic cloves, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • ½ teaspoon dried rosemary

  • Salt and pepper, to taste

  • Optional: Fresh parsley or parmesan for topping


🔥 Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Chop all vegetables into uniform sizes to ensure even roasting.

  3. In a large bowl, combine veggies, olive oil, garlic, and herbs. Toss to coat evenly. Season with salt and pepper.

  4. Spread the vegetables out on the baking sheet in a single layer.

  5. Roast for 25–30 minutes, stirring halfway through, until veggies are tender and slightly crisp on the edges.

  6. Optional garnish: Sprinkle with fresh parsley or a touch of grated parmesan before serving.
