Garlic Chicken Fried Rice

Here’s a simple and delicious recipe for Garlic Chicken Fried Rice:

Ingredients:

  • 2 cups cooked rice (preferably cold)
  • 1 lb chicken breast, diced
  • 3-4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions:

  1. Prepare the Ingredients:
    • Ensure the rice is cooked and cooled. Leftover rice works best.
    • Dice the chicken breast.
    • Mince the garlic and chop the onion.
    • Beat the eggs.
  2. Cook the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
    • Add the diced chicken and season with salt and pepper.
    • Cook until the chicken is no longer pink and cooked through. Remove from the pan and set aside.
  3. Cook the Vegetables:
    • In the same pan, add the remaining 1 tablespoon of vegetable oil.
    • Add the minced garlic and chopped onion, and sauté until fragrant and the onion becomes translucent.
    • Add the mixed vegetables and cook for a few minutes until they are tender.
  4. Cook the Eggs:
    • Push the vegetables to one side of the pan and pour the beaten eggs on the other side.
    • Scramble the eggs until they are cooked through, then mix them with the vegetables.
  5. Combine Everything:
    • Add the cooked rice to the pan and stir well to combine with the vegetables and eggs.
    • Add the cooked chicken back to the pan.
  6. Season the Rice:
    • Pour the soy sauce and oyster sauce (if using) over the rice mixture.
    • Drizzle the sesame oil and stir everything together until well combined and heated through.
  7. Garnish and Serve:
    • Garnish with chopped green onions.
    • Serve hot.

Tips:

  • Cold rice: Using cold rice helps prevent the rice from becoming mushy.
  • Variations: You can add other vegetables like bell peppers, broccoli, or snap peas.
  • Protein: Feel free to substitute the chicken with shrimp, beef, or tofu for different variations.
