🥩 Garlic Butter Steak Bites

  • 1 tbsp olive oil

  • 3 tbsp unsalted butter

  • 4 garlic cloves, minced

  • Optional: chopped fresh parsley or thyme, for garnish

Instructions:

  1. Prep the steak: Pat dry, season generously with salt and pepper.

  2. Sear: Heat olive oil in a large skillet over high heat. Add steak pieces in a single layer—don’t overcrowd. Sear for about 2 minutes per side until browned. Do it in batches if needed.

  3. Add garlic butter: Lower heat to medium, add butter and garlic. Stir until butter melts and garlic becomes fragrant (1 minute). Toss steak bites to coat.

  • 2 cups milk (whole milk or 2%)

  • 1 cup heavy cream (or more milk for lighter version)

  • 1 cup grated Parmesan cheese (plus more to taste)

  • Salt and black pepper, to taste

  • Optional: a pinch of nutmeg or red pepper flakes for extra depth

Instructions:

  1. Cook pasta: Boil shells in salted water until al dente. Drain and set aside.

  2. Make sauce: In a saucepan over medium heat, melt butter. Add garlic and sauté until fragrant. Stir in flour to make a roux; cook for 1 minute.

  3. Add milk and cream: Slowly whisk in liquids. Bring to a gentle simmer, stirring until thickened (about 5 minutes).

  4. Add cheese: Remove from heat, stir in Parmesan until melted and smooth. Season with salt, pepper, and optional spices.

  5. Combine: Toss sauce with cooked shells.

Plate the creamy shells alongside the steak bites, drizzle with extra garlic butter, and garnish with fresh parsley or shaved Parmesan.
