Ingredients:

For the Steak:

  • 2 boneless ribeye steaks (or your preferred cut)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • Fresh parsley, chopped (for garnish)

For the Potatoes:

  • 4 cups baby potatoes, halved
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon dried thyme (optional)
  • 1 teaspoon paprika (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Potatoes:
    • Wash and halve the baby potatoes.
    • In a bowl, toss the potatoes with olive oil, salt, black pepper, dried thyme, and paprika.
    • Transfer the seasoned potatoes to an oven-safe skillet.
  3. Cook Potatoes:
    • Roast the potatoes in the preheated oven for about 20-25 minutes or until they are tender and golden brown.
  4. Prepare Steak:
    • While the potatoes are roasting, season the steaks with salt and black pepper on both sides.
    • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  5. Sear Steak:
    • Once the skillet is hot, add the steaks and sear for 3-4 minutes on each side for medium-rare, or adjust based on your preferred doneness.
    • Add minced garlic and butter to the skillet during the last minute of cooking. Baste the steaks with the melted garlic butter.
  6. Combine and Serve:
    • Remove the skillet from the oven once the potatoes are done.
    • Place the seared steaks on top of the roasted potatoes in the skillet.
    • Garnish with chopped fresh parsley.
  7. Rest and Slice:
    • Allow the steaks to rest for a few minutes before slicing. This helps retain the juices.
  8. Serve:
    • Serve the sliced steak on top of the garlic butter-infused potatoes.
