Garlic Butter Salmon with Spinach & Mushrooms in Creamy Sauce

Ingredients:

  • For the Salmon:

    • 4 salmon fillets (skin-on or skinless, your choice)

    • Salt and pepper to taste

    • 1 tablespoon olive oil

    • 2 tablespoons butter

    • 3 garlic cloves, minced

    • 1 tablespoon fresh lemon juice (optional)

  • For the Creamy Sauce:

    • 1 tablespoon olive oil or butter

    • 1 cup mushrooms (sliced)

    • 3 garlic cloves, minced

    • 2 cups fresh spinach

    • 1/2 cup heavy cream

    • 1/2 cup chicken broth (or vegetable broth)

    • 1/4 cup Parmesan cheese (grated)

    • Salt and pepper to taste

    • Fresh parsley or basil for garnish (optional)

Instructions:

  1. Prepare the Salmon:

    • Season the salmon fillets with salt and pepper on both sides.

    • Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.

    • Add the salmon fillets to the skillet, skin-side down (if using skin-on) and cook for about 4-5 minutes on each side, or until the salmon is cooked through and has a golden crust. Remove the salmon from the skillet and set it aside.

  2. Make the Creamy Spinach & Mushroom Sauce:

    • In the same skillet, add 1 tablespoon of olive oil or butter and sauté the sliced mushrooms over medium heat for about 4 minutes until they’re softened and slightly golden.

    • Add the minced garlic and cook for another 30 seconds, stirring frequently.

    • Add the fresh spinach and cook for about 2 minutes until the spinach wilts.

    • Pour in the heavy cream and chicken broth, stirring to combine. Let the sauce simmer for about 3-4 minutes until it starts to thicken slightly.

    • Stir in the grated Parmesan cheese and continue cooking until the sauce is creamy and smooth. Season with salt and pepper to taste.

  3. Combine & Serve:

    • Return the cooked salmon to the skillet, spooning some of the creamy spinach and mushroom sauce over the top.

    • Let the salmon heat through in the sauce for about 2-3 minutes.

    • Garnish with fresh parsley or basil if desired, and serve hot.

Serving Suggestions:

This dish pairs wonderfully with steamed rice, mashed potatoes, or a side of roasted vegetables like asparagus or broccoli. You can also enjoy it with some crusty bread to soak up the creamy sauce.
