Garlic Butter Chicken Bites and Asparagus

Here’s a simple and delicious recipe for Garlic Butter Chicken Bites and Asparagus!

Ingredients:

  • For the Chicken Bites:
    • 2 lbs chicken breast, cut into bite-sized cubes
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • 1 teaspoon paprika (optional)
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 tablespoon butter (for cooking)
    • 2 cloves garlic, minced
    • 1 tablespoon fresh parsley, chopped (optional)
  • For the Asparagus:
    • 1 bunch asparagus, trimmed and cut into 2-inch pieces
    • 1 tablespoon olive oil
    • Salt and pepper to taste
    • 1/2 teaspoon garlic powder (optional)
    • 1 tablespoon fresh lemon juice (optional)
  • For the Garlic Butter Sauce:
    • 3 tablespoons butter
    • 3 cloves garlic, minced
    • 1/4 teaspoon crushed red pepper flakes (optional)
    • 1 tablespoon fresh parsley, chopped
    • Salt to taste

Instructions:

  1. Prepare the Chicken Bites:
    • Season the chicken cubes with salt, pepper, paprika, garlic powder, and onion powder.
    • Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
    • Add the chicken cubes and cook for about 5-7 minutes until golden brown and cooked through. Remove the chicken and set aside.
  2. Cook the Asparagus:
    • In the same skillet, add 1 tablespoon of olive oil over medium heat.
    • Add the asparagus and season with salt, pepper, and garlic powder (optional). Stir occasionally, cooking for 4-5 minutes until tender and slightly crispy.
    • Remove the asparagus from the skillet and set aside.
  3. Prepare the Garlic Butter Sauce:
    • In the same skillet, melt 3 tablespoons of butter over medium heat.
    • Add the garlic and cook for about 1 minute until fragrant.
    • Add in the crushed red pepper flakes (if using) and fresh parsley, then stir to combine. Season with salt to taste.
  4. Combine Everything:
    • Return the cooked chicken to the skillet with the garlic butter sauce and toss to coat evenly.
    • Add the cooked asparagus to the skillet and toss gently to combine.
  5. Serve:
    • Serve immediately, garnished with fresh parsley and a squeeze of lemon juice if desired. Enjoy!
