Garlic and Herb Baked Potatoes

Here’s a simple and delicious recipe for Garlic and Herb Baked Potatoes:

Ingredients:

  • 4 large russet potatoes
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 4 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese, sour cream, or chives for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes:
    • Wash and scrub the potatoes thoroughly. Pat them dry with a towel.
    • Using a fork, poke several holes in each potato to allow steam to escape during baking.
  3. Season the Potatoes:
    • In a small bowl, combine the minced garlic, chopped rosemary, thyme, parsley, olive oil, salt, and pepper.
    • Rub each potato with the garlic and herb mixture, ensuring that they are evenly coated.
  4. Bake the Potatoes:
    • Place the seasoned potatoes on a baking sheet lined with parchment paper or foil.
    • Bake in the preheated oven for 45-60 minutes, or until the potatoes are tender when pierced with a fork.
  5. Add Butter (Optional):
    • About 10 minutes before the potatoes are done, remove them from the oven and carefully slit them open. Place a small pat of butter inside each potato and return to the oven for the remaining baking time.
  6. Serve:
    • Once the potatoes are fully baked, remove them from the oven and let them cool slightly before serving.
    • Optionally, you can sprinkle some grated Parmesan cheese, add a dollop of sour cream, or garnish with chopped chives.

Tips:

  • For extra crispy skins, you can brush the potatoes with a bit more olive oil before baking.
  • You can substitute dried herbs for fresh ones if needed, just reduce the amount by half.
