Fruit Salad Cheesecake Recipe
Ingredients:
Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Cheesecake Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
Fruit Topping:
- 1 cup strawberries, sliced
- 1 cup blueberries
- 1 cup kiwi, peeled and sliced
- 1 cup pineapple chunks
- 1/2 cup mandarin oranges
- 1/4 cup apricot preserves or fruit glaze
Instructions:
- Prepare the Crust:
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.
- Press the mixture into the bottom of a 9-inch springform pan.
- Bake for 10 minutes. Remove from oven and let cool.
- Make the Cheesecake Filling:
- In a large bowl, beat the cream cheese until smooth.
- Add sugar and vanilla extract, and beat until combined.
- Add the eggs one at a time, beating after each addition until smooth.
- Stir in the sour cream until fully incorporated.
- Bake the Cheesecake:
- Pour the cheesecake filling over the cooled crust.
- Bake in the preheated oven for 50-60 minutes, until the center is just set and slightly jiggly.
- Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature.
- Refrigerate for at least 4 hours, preferably overnight.
- Prepare the Fruit Topping:
- In a medium bowl, gently toss the strawberries, blueberries, kiwi, pineapple, and mandarin oranges together.
- In a small saucepan, heat the apricot preserves over low heat until melted and smooth. Alternatively, you can microwave it in a microwave-safe bowl for about 30 seconds.
- Assemble the Cheesecake:
- Carefully remove the cheesecake from the springform pan and place it on a serving platter.
- Arrange the fruit mixture evenly on top of the cheesecake.
- Brush the melted apricot preserves over the fruit to give it a glossy finish.
- Serve:
