Fruit Jelly Cake

Here’s a simple recipe for a Fruit Jelly Cake that’s light, refreshing, and fun to make!

Ingredients:

  • For the Cake:
    • 1 ½ cups all-purpose flour
    • 1 cup sugar
    • 3 eggs
    • 1 teaspoon vanilla extract
    • ½ cup milk
    • ½ cup unsalted butter (melted)
    • 1 ½ teaspoons baking powder
    • A pinch of salt
  • For the Jelly:
    • 1 box (3 oz) fruit-flavored gelatin (like strawberry, orange, or mixed berry)
    • 2 cups boiling water
    • 1 cup cold water
  • For the Fruit Topping:
    • Fresh fruits of your choice (such as strawberries, kiwi, blueberries, and grapes)

Instructions:

1. Make the Cake Base:

  • Preheat your oven to 350°F (175°C) and grease a round or square cake pan.
  • In a bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk the eggs, milk, melted butter, and vanilla extract.
  • Gradually add the wet ingredients into the dry ingredients and mix until combined.
  • Pour the batter into the prepared cake pan and bake for about 25-30 minutes, or until a toothpick inserted comes out clean.
  • Let the cake cool completely in the pan.

2. Prepare the Jelly:

  • In a bowl, dissolve the fruit-flavored gelatin in the boiling water, stirring until fully dissolved.
  • Stir in the cold water and let the mixture cool to room temperature.

3. Assemble the Cake:

  • Once the cake is cooled, use a fork to gently poke small holes across the top.
  • Pour the prepared gelatin mixture over the cake, ensuring it soaks into the holes.
  • Refrigerate the cake for at least 4 hours, or until the jelly is set.

4. Top with Fresh Fruit:

  • Once the jelly has set, decorate the top of the cake with fresh fruit slices in any design you like.
  • You can arrange the fruit in a pattern or scatter them randomly for a fun, colorful look.

5. Serve & Enjoy:

  • Slice and serve chilled!
