Fruit and Chocolate Trifle

Here’s a delicious recipe for a Fruit and Chocolate Trifle that’s sure to impress!

Ingredients

For the Chocolate Cake

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water

For the Chocolate Pudding

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the Whipped Cream

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For the Fruit

  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 banana, sliced
  • Optional: mint leaves for garnish

Instructions

Make the Chocolate Cake

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients: In another bowl, combine buttermilk, vegetable oil, egg, and vanilla. Add to the dry ingredients and mix until combined.
  4. Add Boiling Water: Carefully stir in the boiling water until the batter is smooth.
  5. Bake: Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean. Let it cool completely.

Make the Chocolate Pudding

  1. Combine Ingredients: In a saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt.
  2. Cook: Place over medium heat, whisking constantly until the mixture thickens and bubbles.
  3. Add Vanilla: Once thick, remove from heat and stir in vanilla. Allow to cool.

Make the Whipped Cream

  1. Whip Cream: In a mixing bowl, beat heavy cream, powdered sugar, and vanilla until soft peaks form.

Assemble the Trifle

  1. Layering: In a large glass trifle dish or individual cups, start with a layer of chocolate cake (cut into cubes), followed by a layer of chocolate pudding, a layer of mixed berries, and then a layer of whipped cream.
  2. Repeat Layers: Repeat the layers until the dish is filled, finishing with whipped cream on top.
  3. Garnish: Top with additional berries and mint leaves, if desired.

Chill and Serve

  • Chill the trifle in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
