Fried Chicken Gizzards

Here’s a simple and delicious Fried Chicken Gizzards recipe that results in crispy, flavorful bites — perfect for a snack or side dish!


Southern-Style Fried Chicken Gizzards Recipe

Ingredients:

  • 1 lb chicken gizzards, cleaned and trimmed

  • 2 cups buttermilk (or whole milk + 1 tbsp vinegar/lemon juice as a substitute)

  • 1 tbsp hot sauce (optional)

  • 1 cup all-purpose flour

  • ½ cup cornmeal (optional for extra crunch)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • ½ tsp cayenne pepper (optional)

  • Salt and black pepper to taste

  • Oil for frying (vegetable, canola, or peanut)


Instructions:

  1. Clean and Boil (Optional but recommended for tenderness):

    • Rinse gizzards and remove any connective tissue or tough membrane.

    • Boil in salted water for about 30–45 minutes until tender.

    • Drain and let them cool slightly.

  2. Marinate:

    • Place gizzards in a bowl with buttermilk and hot sauce.

    • Cover and marinate for at least 1 hour (overnight for best flavor).

  3. Prepare Coating:

    • In a large bowl or ziplock bag, mix flour, cornmeal (if using), garlic powder, onion powder, paprika, cayenne, salt, and pepper.

  4. Dredge:

    • Remove gizzards from buttermilk, letting excess drip off.

    • Toss them in the seasoned flour mixture until well coated.

  5. Fry:

    • Heat 2–3 inches of oil in a deep skillet or fryer to 350°F (175°C).

    • Fry gizzards in batches for 3–5 minutes until golden brown and crispy.

    • Remove and drain on paper towels.

  6. Serve:

    • Serve hot with your favorite dipping sauce (like ranch, hot sauce, or honey mustard).
