Fricasseed cabbage with bacon and onion is a delicious and comforting dish. Here’s a simple recipe to make it:

Ingredients:

  • 1 small head of cabbage, thinly sliced
  • 6 slices of bacon, chopped
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon red pepper flakes for a bit of heat
  • Optional: Fresh herbs like thyme or parsley for garnish

Instructions:

  1. Prepare Ingredients: Start by slicing the cabbage thinly, chopping the bacon into small pieces, and thinly slicing the onion and garlic.
  2. Cook Bacon: In a large skillet or frying pan, cook the chopped bacon over medium heat until it becomes crispy. Remove the bacon from the pan and set it aside on a paper towel-lined plate to drain excess grease.
  3. Sauté Onion and Garlic: In the same skillet with the bacon fat, add the olive oil if needed, then add the sliced onion and minced garlic. Sauté until the onion becomes translucent and fragrant, about 3-5 minutes.
  4. Add Cabbage: Add the thinly sliced cabbage to the skillet with the sautéed onion and garlic. Stir to combine everything.
  5. Season and Cook: Season the cabbage mixture with salt, pepper, and red pepper flakes if using. Stir well to distribute the seasoning. Cover the skillet with a lid and cook the cabbage mixture over medium-low heat, stirring occasionally, until the cabbage is tender but still has a bit of crunch, about 15-20 minutes.
  6. Combine with Bacon: Once the cabbage is cooked to your desired tenderness, add the cooked bacon back into the skillet. Stir well to combine all the ingredients and allow the flavors to meld together for another couple of minutes.
  7. Serve: Remove the skillet from heat. Taste and adjust seasoning if needed. Serve the fricasseed cabbage hot, garnished with fresh herbs if desired.
