French-Style Potato Salad

French-style potato salad, also known as “Salade de Pommes de Terre,” is a delicious variation of potato salad that typically features a lighter dressing compared to its American counterpart. Here’s a basic recipe:

Ingredients:

  • 2 pounds (about 900g) potatoes (such as Yukon Gold or red potatoes), peeled and cubed
  • 1/4 cup white wine vinegar
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh chives
  • 1/4 cup chopped red onion (optional)
  • 1/4 cup chopped cornichons or pickles (optional)

Instructions:

  1. In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 10-15 minutes. Be careful not to overcook, as you want the potatoes to remain firm. Drain the potatoes and let them cool slightly.
  2. In a small bowl, whisk together the white wine vinegar, olive oil, minced garlic, Dijon mustard, salt, and pepper to make the dressing.
  3. Place the slightly cooled potatoes in a large mixing bowl. Pour the dressing over the potatoes and gently toss to coat evenly.
  4. Add the chopped parsley, chives, red onion (if using), and chopped cornichons or pickles (if using) to the bowl with the potatoes. Gently toss everything together until well combined.
  5. Taste and adjust seasoning if necessary. You can add more salt, pepper, or vinegar according to your taste preferences.
  6. Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld together before serving.
  7. Serve chilled or at room temperature as a side dish alongside grilled meats, sandwiches, or as part of a picnic spread.

Feel free to customize this recipe by adding other ingredients such as hard-boiled eggs, cooked bacon, capers, or different herbs according to your taste preferences. Enjoy your French-style potato salad!
