French Onion Soup Stuffed Meatloaf

Sure, here’s a recipe for French Onion Soup Stuffed Meatloaf:

Ingredients:

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 2 cups beef broth
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • 1 teaspoon sugar
  • 1 cup shredded Gruyere cheese

Instructions:

For the French Onion Soup:

  1. Heat butter and olive oil in a large skillet over medium heat.
  2. Add the sliced onions and cook until caramelized, about 20-25 minutes, stirring occasionally.
  3. Sprinkle sugar over the onions and continue cooking for another 5 minutes until golden brown.
  4. Add thyme and beef broth, and simmer for 10-15 minutes until the broth has reduced slightly. Set aside.

For the Meatloaf:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together ground beef, breadcrumbs, eggs, finely chopped onion, minced garlic, Worcestershire sauce, salt, and pepper until well combined.
  3. Divide the meat mixture in half. Press half of the mixture into the bottom of a greased loaf pan, making a well in the center.
  4. Spoon the caramelized onion mixture into the well.
  5. Sprinkle shredded Gruyere cheese over the caramelized onions.
  6. Top with the remaining half of the meat mixture, pressing down gently to seal the edges.
  7. Bake in the preheated oven for 1 hour, or until the meatloaf is cooked through and browned on top.
  8. Let the meatloaf rest for 10 minutes before slicing.

Serve slices of the French Onion Soup Stuffed Meatloaf with extra caramelized onion broth spooned over the top for a deliciously comforting meal!
