French Onion Soup Rice

French Onion Soup Rice is a delicious variation of traditional French onion soup, incorporating rice for added texture and heartiness. Here’s a simple recipe to make this comforting dish:

Ingredients:

  • 2 tablespoons butter
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 1 cup long-grain white rice
  • 1/2 cup grated Gruyere cheese
  • Salt, to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 20-25 minutes.
  2. Stir in the minced garlic, thyme, and black pepper, and cook for an additional 2-3 minutes until fragrant.
  3. Pour in the beef broth and bring the mixture to a simmer.
  4. Add the rice to the pot and stir to combine. Reduce the heat to low, cover, and let simmer for about 15-20 minutes, or until the rice is cooked through and tender.
  5. Taste and adjust seasoning with salt if needed.
  6. Ladle the soup into bowls and top each serving with a generous sprinkle of grated Gruyere cheese.
  7. If desired, place the bowls under a broiler for a few minutes until the cheese is melted and bubbly.
  8. Garnish with chopped fresh parsley before serving, if desired.
