Here’s a recipe for Fluffy Blueberry Biscuits that are soft, buttery, and packed with juicy blueberries. Perfect for breakfast or a sweet snack!


🫐 Fluffy Blueberry Biscuits Recipe

Ingredients

Dry:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 3 tbsp granulated sugar

Cold Ingredients:

  • 6 tbsp unsalted butter, cold and cut into small cubes

  • 1 cup fresh or frozen blueberries (keep frozen if using frozen)

Wet:

  • ¾ cup buttermilk (plus more for brushing tops)

  • 1 tsp vanilla extract

  • Optional: Zest of 1 lemon for brightness

Topping (optional):

  • Coarse sugar for sprinkling

  • Glaze (powdered sugar + milk or lemon juice)


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. Mix dry ingredients:
    In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

  3. Cut in butter:
    Add cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to work it in until the mixture resembles coarse crumbs with pea-sized pieces.

  4. Add blueberries:
    Gently fold in blueberries. If using frozen, do not thaw to prevent color bleeding.

  5. Mix wet ingredients:
    In a separate bowl or measuring cup, mix buttermilk and vanilla (add lemon zest here if using).

  6. Combine:
    Pour wet ingredients into the dry ingredients and gently mix just until combined. Do not overmix.

  7. Shape biscuits:
    Turn dough out onto a floured surface. Pat into a 1-inch thick rectangle. Fold it in half once or twice (for extra flakiness), then pat down again. Cut into rounds using a biscuit cutter or just cut into squares.

  8. Bake:
    Place biscuits on the baking sheet, close together for softer sides or spaced apart for crispier edges. Brush tops with buttermilk and sprinkle with coarse sugar if desired.

  9. Bake for 15–18 minutes, or until golden brown on top.

  10. Optional glaze:
    Mix ½ cup powdered sugar with 1–2 tsp milk or lemon juice. Drizzle over slightly cooled biscuits.
