Ferrero Rocher Cake Perfection

Ferrero Rocher cake sounds absolutely decadent! Here’s a recipe for you:

Ferrero Rocher Cake

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup buttermilk
  • 1 cup brewed coffee, cooled
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract

For the Ferrero Rocher Filling:

  • 1 cup Nutella
  • 1/2 cup chopped hazelnuts
  • 1/2 cup crushed Ferrero Rocher candies

For the Chocolate Ganache:

  • 1 cup heavy cream
  • 8 oz. semisweet chocolate, chopped
  • 1/4 cup unsalted butter

For Decoration:

  • Whole Ferrero Rocher candies
  • Crushed hazelnuts

Instructions:

1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. Make the Cake:

  • In a large mixing bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • Add eggs, buttermilk, coffee, oil, and vanilla extract. Beat on medium speed for about 2 minutes until well combined.
  • Divide the batter evenly between the prepared cake pans.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.

3. Make the Ferrero Rocher Filling:

  • In a bowl, mix Nutella, chopped hazelnuts, and crushed Ferrero Rocher candies until well combined.

4. Assemble the Cake:

  • Place one cake layer on a serving plate. Spread the Ferrero Rocher filling evenly over the top.
  • Place the second cake layer on top.

5. Make the Chocolate Ganache:

  • In a small saucepan, heat the heavy cream until it starts to simmer.
  • Remove from heat and add chopped chocolate and butter. Let it sit for a minute, then stir until smooth and glossy.
  • Let the ganache cool slightly until it thickens to a spreadable consistency.

6. Frost the Cake:

  • Pour the chocolate ganache over the assembled cake, letting it drip down the sides.
  • Use a spatula to spread the ganache evenly over the top and sides of the cake.

7. Decorate the Cake:

  • Garnish the top of the cake with whole Ferrero Rocher candies and crushed hazelnuts.

8. Chill the Cake:

  • Place the cake in the refrigerator for at least 1 hour to set the ganache before serving.
