Easy Zucchini Fritters Recipe

Ingredients:

  • 2 medium zucchinis, grated
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour (or gluten-free flour for a gluten-free option)
  • 1/4 cup grated Parmesan cheese (optional for extra flavor)
  • 1 large egg
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil (for frying)

Instructions:

  1. Prepare the Zucchini:
    • Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or paper towels and squeeze out any excess moisture. This helps the fritters stay crispy.
  2. Mix the Fritter Batter:
    • In a large bowl, combine the grated zucchini, flour, Parmesan cheese (if using), egg, garlic powder, onion powder, and a pinch of black pepper.
    • Stir everything together until well combined.
  3. Cook the Fritters:
    • Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
    • Scoop about 2 tablespoons of the zucchini mixture and drop it into the pan, flattening it gently with a spatula to form a small patty.
    • Cook the fritters for 2-3 minutes on each side, until golden brown and crispy. Repeat with the remaining mixture, adding more oil as needed.
  4. Drain and Serve:
    • Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.
    • Serve immediately with a dollop of sour cream, yogurt, or a sprinkle of fresh herbs, if desired.
