Easy Stuffed Pepper Casserole

Ingredients:

  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 3 bell peppers (any color), diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 cup uncooked white rice
  • 2 cups beef or chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 1/2 cups shredded mozzarella or cheddar cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook Meat and Vegetables:
    • In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.
    • Add the diced onion, bell peppers, and minced garlic to the skillet. Cook until the vegetables are tender, about 5-7 minutes.
  3. Combine Ingredients:
    • Stir in the diced tomatoes (with their juice), tomato sauce, uncooked rice, beef or chicken broth, Italian seasoning, salt, and pepper.
    • Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for about 15 minutes, or until the rice is nearly cooked (it will finish cooking in the oven).
  4. Transfer to Baking Dish:
    • Transfer the mixture to a greased 9×13 inch baking dish. Spread it out evenly.
  5. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
    • Remove the foil, sprinkle the shredded cheese evenly over the top, and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Let the casserole cool for a few minutes before serving. Garnish with chopped parsley if desired.
