easy slow cooker beef stew

Sure thing! Here’s a simple and delicious slow cooker beef stew recipe:

Ingredients:

  • 1.5 to 2 pounds of beef stew meat, cut into cubes
  • 4 medium potatoes, peeled and diced
  • 3 carrots, peeled and sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Place the beef stew meat, potatoes, carrots, onion, and garlic in the slow cooker.
  2. In a mixing bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  3. Pour the mixture over the ingredients in the slow cooker. Add the bay leaf.
  4. Stir everything gently to combine.
  5. Cover the slow cooker and cook on low for 7-8 hours or on high for 3-4 hours, or until the beef is tender and the vegetables are cooked through.
  6. If you prefer a thicker stew, about 30 minutes before serving, ladle out some of the broth from the slow cooker into a small bowl. Whisk in the flour until smooth, then pour the mixture back into the slow cooker and stir well. Let it cook for another 30 minutes to thicken.
  7. Taste and adjust seasoning if necessary. Remove the bay leaf before serving.
  8. Garnish with chopped fresh parsley if desired.
  9. Serve hot and enjoy your delicious slow cooker beef stew!
