Easy shrimp and salmon with full healthy salad

Sure! Here’s a simple and healthy recipe for shrimp and salmon with a delicious salad:

Ingredients:

For the shrimp and salmon:

  • 200g of shrimp, peeled and deveined
  • 200g of salmon fillet, skin removed
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

For the salad:

  • 4 cups of mixed greens (such as lettuce, spinach, arugula)
  • 1 cucumber, sliced
  • 1 bell pepper, diced
  • 1 cup of cherry tomatoes, halved
  • 1/4 cup of red onion, thinly sliced
  • 1/4 cup of crumbled feta cheese (optional)
  • 2 tablespoons of balsamic vinegar
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the Shrimp and Salmon:
    • Preheat your oven to 375°F (190°C).
    • Place the salmon fillet on a baking sheet lined with parchment paper. Season with salt, pepper, and minced garlic. Drizzle with olive oil.
    • In a separate bowl, toss the shrimp with minced garlic, olive oil, salt, and pepper.
    • Arrange the shrimp on the same baking sheet as the salmon.
    • Bake in the preheated oven for about 12-15 minutes, or until the shrimp are pink and opaque, and the salmon is cooked through and flakes easily with a fork.
  2. Prepare the Salad:
    • In a large salad bowl, combine the mixed greens, sliced cucumber, diced bell pepper, cherry tomatoes, and sliced red onion.
    • In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper to make the dressing.
    • Pour the dressing over the salad and toss until everything is well coated.
    • Sprinkle crumbled feta cheese over the top of the salad if desired.
  3. Serve:
    • Once the shrimp and salmon are cooked, remove them from the oven.
    • Divide the shrimp and salmon onto plates.
    • Serve alongside the fresh salad and lemon wedges.
