Easy Mexican Street Corn

Here’s a quick and Easy Mexican Street Corn (Elote) recipe that brings bold, creamy, cheesy flavor with minimal effort:


🌽 Easy Mexican Street Corn (Elote)

Ingredients:

  • 4 ears of corn, husked

  • 2 tablespoons mayonnaise

  • 2 tablespoons sour cream (or Greek yogurt)

  • ½ teaspoon garlic powder

  • ½ teaspoon chili powder (or Tajín)

  • ¼ cup crumbled cotija cheese (or feta/parmesan)

  • 1 tablespoon chopped cilantro (optional)

  • 1 tablespoon lime juice

  • Lime wedges, for serving


Instructions:

  1. Grill the Corn:
    Heat a grill or grill pan over medium-high. Grill corn for 7–10 minutes, turning occasionally, until charred in spots.

  2. Mix the Sauce:
    In a bowl, stir together mayo, sour cream, garlic powder, chili powder, and lime juice.

  3. Coat the Corn:
    Remove corn from grill and brush each ear generously with the mayo mixture.

  4. Add Toppings:
    Sprinkle with cotija cheese and chopped cilantro. Add an extra dusting of chili powder if desired.

  5. Serve Warm:
    Serve with lime wedges on the side for an extra burst of flavor.
