Easy Hamburger Rice Casserole

Here’s a simple and delicious recipe for a Hamburger Rice Casserole that you can make with everyday ingredients:

Ingredients:

  • 1 lb ground beef
  • 1 cup long-grain white rice (uncooked)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
  • 1 cup beef broth (or water)
  • 1 small onion, diced
  • 1 cup shredded cheddar cheese (optional, for topping)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 1 tbsp olive oil (for cooking)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Ground Beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  3. Sauté the Onion: Add the diced onion to the skillet with the beef and cook for 2-3 minutes, until softened. Stir in the garlic powder, onion powder, salt, and pepper.
  4. Assemble the Casserole: In a large mixing bowl, combine the cooked ground beef and onions with the uncooked rice, diced tomatoes (with juice), cream of mushroom soup, and beef broth. Mix everything until well combined.
  5. Bake: Transfer the mixture to a greased 9×13-inch baking dish. Cover with aluminum foil and bake for 35 minutes.
  6. Add Cheese (Optional): After 35 minutes, remove the foil and sprinkle the shredded cheddar cheese on top of the casserole. Return it to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  7. Serve: Once the casserole is done, let it cool for a few minutes before serving. Enjoy your hearty and comforting hamburger rice casserole!
