Here’s a simple and creamy potato soup recipe that’s easy to make and perfect for a cozy meal!
Ingredients:
- 4 medium-sized potatoes (peeled and diced)
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 4 cups chicken or vegetable broth
- 1 cup milk (or half-and-half for extra creaminess)
- 2 tbsp butter
- Salt and pepper to taste
- Optional toppings: shredded cheese, chopped green onions, crispy bacon bits, sour cream
Instructions:
- Cook the potatoes and onions: In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, cooking for 3-4 minutes until softened and fragrant.
- Add potatoes and broth: Add the diced potatoes to the pot and pour in the chicken or vegetable broth. Bring to a simmer and cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.
- Mash the potatoes: Once the potatoes are tender, use a potato masher to mash some of them in the pot for a thicker texture (you can leave some chunks for a heartier soup). If you prefer a smoother soup, use an immersion blender or transfer the soup in batches to a blender and blend until smooth.
- Add milk and season: Stir in the milk (or half-and-half) and season with salt and pepper to taste. Simmer for another 5 minutes, stirring occasionally.
- Serve: Ladle the soup into bowls, and top with your favorite garnishes like shredded cheese, green onions, crispy bacon bits, or a dollop of sour cream.
Enjoy your creamy, comforting potato soup!
