Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups (315g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Additional granulated sugar for rolling

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Mix Dry Ingredients with Wet: Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If the dough seems too soft, you can refrigerate it for about 30 minutes to firm it up.
  6. Form Dough Balls: Roll the dough into small balls, about 1 inch in diameter. Roll each ball in granulated sugar until coated.
  7. Place on Baking Sheets: Place the sugar-coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The tops of the cookies should appear cracked.
  9. Cool: Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
