Easy Cheeseburger Soup

Here’s an easy recipe for Cheeseburger Soup:

Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, peeled and diced
  • 1 cup shredded carrots
  • 3 cups chicken broth
  • 2 cups milk (or half-and-half for creamier soup)
  • 2 cups shredded cheddar cheese
  • 1 tbsp Worcestershire sauce
  • 2 tbsp flour (for thickening)
  • 2 tbsp butter
  • Salt and pepper to taste
  • Optional toppings: crumbled bacon, chopped green onions, sour cream

Instructions:

  1. Cook the ground beef: In a large pot, cook the ground beef over medium heat until browned. Drain excess fat and set the beef aside.
  2. Sauté veggies: In the same pot, add butter and sauté the diced onions and minced garlic until soft, about 3-4 minutes.
  3. Add potatoes and carrots: Stir in the diced potatoes and shredded carrots. Cook for another 2 minutes.
  4. Add broth and simmer: Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 10-12 minutes, or until the potatoes are tender.
  5. Make a roux: In a small bowl, whisk the flour with a little bit of milk (or half-and-half) until smooth. Slowly add this mixture into the soup while stirring, which will thicken the soup.
  6. Add remaining ingredients: Stir in the cooked ground beef, Worcestershire sauce, and the remaining milk. Let the soup simmer for another 5 minutes.
  7. Melt cheese: Slowly add in the shredded cheddar cheese, stirring until melted and smooth.
  8. Season and serve: Taste and season the soup with salt and pepper. Serve hot with optional toppings like bacon, green onions, or sour cream.
