Here’s a simple recipe for Thai Red Curry Dumpling Soup that combines the rich flavors of Thai red curry with delicious dumplings in a savory broth:

Ingredients:

For the Dumplings:

  • 1/2 pound ground pork, chicken, or tofu (for a vegetarian option)
  • 1/4 cup finely chopped green onions
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon white pepper
  • 1 package of dumpling wrappers (or wonton wrappers)

For the Soup:

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 4 cups chicken or vegetable broth
  • 1 tablespoon fish sauce (or soy sauce for vegetarian)
  • 1 teaspoon sugar
  • 1/2 teaspoon lime zest
  • Juice of 1 lime
  • 1-2 cups baby spinach or other leafy greens
  • Fresh cilantro, for garnish
  • Sliced red chilies (optional, for heat)
  • Lime wedges, for serving

Instructions:

1. Make the Dumplings:

  • In a bowl, mix the ground pork (or chicken/tofu), green onions, ginger, garlic, soy sauce, sesame oil, and white pepper until well combined.
  • Lay out the dumpling wrappers on a clean surface. Spoon about 1 teaspoon of the filling into the center of each wrapper.
  • Moisten the edges of the wrapper with a little water and fold it into a half-moon shape, sealing the edges tightly. Repeat with the remaining wrappers and filling.

2. Prepare the Soup:

  • In a large pot, heat vegetable oil over medium heat. Add the chopped onion and cook until soft, about 3-4 minutes.
  • Stir in the red curry paste and cook for another 1-2 minutes, allowing the paste to become fragrant.
  • Add the coconut milk, chicken or vegetable broth, fish sauce, and sugar. Stir well to combine and bring to a simmer. Let the broth simmer for 5 minutes to blend the flavors.

3. Cook the Dumplings:

  • Gently drop the dumplings into the simmering soup. Be careful not to overcrowd the pot.
  • Let the dumplings cook for about 5-7 minutes or until they float to the surface and are fully cooked through.

4. Finish the Soup:

  • Add the baby spinach or leafy greens to the pot and stir until wilted.
  • Stir in the lime zest and lime juice for a fresh, tangy kick.

5. Serve:

  • Ladle the soup and dumplings into bowls. Garnish with fresh cilantro, sliced red chilies, and a squeeze of lime juice if desired.
