Turkish Pide Bread Recipe

Ingredients:

  • For the Dough:
    • 4 cups all-purpose flour
    • 1 ½ cups warm water
    • 2 ¼ tsp active dry yeast (1 packet)
    • 1 tsp sugar
    • 2 tsp salt
    • 2 tbsp olive oil
  • For the Topping:
    • 1 egg yolk
    • 2 tbsp yogurt
    • 2 tbsp olive oil
    • Sesame seeds
    • Nigella seeds (optional)

Instructions:

  1. Prepare the Dough:
    • In a small bowl, dissolve the sugar in warm water. Sprinkle the yeast over the water and let it sit for about 10 minutes until it becomes frothy.
    • In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
    • Mix the ingredients until a dough forms. Knead the dough on a floured surface for about 10 minutes until it is smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until it has doubled in size.
  2. Shape the Pide:
    • Preheat your oven to 450°F (230°C). If you have a pizza stone, place it in the oven to heat up.
    • Punch down the risen dough and divide it into two equal pieces. Shape each piece into a ball.
    • On a floured surface, roll out each ball into an oval or round shape, about ½ inch thick.
  3. Prepare the Topping:
    • In a small bowl, whisk together the egg yolk, yogurt, and olive oil.
  4. Assemble the Pide:
    • Transfer the shaped dough onto a piece of parchment paper or a baking sheet lined with parchment.
    • Brush the top of each dough with the egg mixture. Using your fingers or the back of a spoon, create a crisscross pattern on the surface of the dough.
    • Sprinkle sesame seeds and nigella seeds over the top.
  5. Bake:
    • Carefully transfer the parchment paper with the dough onto the preheated pizza stone or directly place the baking sheet in the oven.
    • Bake for about 15-20 minutes, or until the pide is golden brown and cooked through.
  6. Serve:
    • Allow the pide to cool slightly before slicing and serving. Enjoy it warm with dips, cheeses, or as a side to your favorite meal.

Tips:

  • For extra flavor, you can add some garlic powder or dried herbs to the dough.
  • If you don’t have a pizza stone, you can use an inverted baking sheet preheated in the oven.
