Delicious Smashed Avocado Bruschetta

Here’s a delicious recipe for Smashed Avocado Bruschetta:

Ingredients:

  • For the Bruschetta:
    • 1 baguette or ciabatta loaf, sliced into 1/2-inch thick pieces
    • 2 ripe avocados
    • 1 tablespoon fresh lemon juice
    • Salt and black pepper to taste
    • 2 cloves garlic, peeled
    • 1/4 cup cherry tomatoes, halved or diced
    • 1/4 red onion, finely chopped
    • Fresh basil leaves, torn
    • 2 tablespoons extra virgin olive oil
    • Balsamic glaze (optional)

Instructions:

  1. Prepare the Bread:
    • Preheat your oven to 400°F (200°C).
    • Arrange the bread slices on a baking sheet.
    • Brush each slice lightly with olive oil.
    • Bake for about 10-12 minutes or until the bread is golden and crispy.
    • Remove from the oven and rub each slice with a clove of garlic while still warm. Set aside to cool slightly.
  2. Prepare the Avocado:
    • Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
    • Add the lemon juice, salt, and black pepper.
    • Mash the avocado mixture with a fork until smooth but still slightly chunky.
  3. Assemble the Bruschetta:
    • Spoon the smashed avocado onto each piece of toasted bread.
    • Top with cherry tomatoes and red onion.
    • Sprinkle torn basil leaves over the top.
    • Drizzle with extra virgin olive oil and balsamic glaze, if using.
  4. Serve:
    • Serve immediately and enjoy your delicious smashed avocado bruschetta!

Tips:

  • For extra flavor, you can add a pinch of red pepper flakes to the avocado mixture.
  • To keep the avocado from browning, keep the pits in the mixture until ready to serve.

This smashed avocado bruschetta makes a perfect appetizer, snack, or even a light lunch. Enjoy!
