Ingredients:

For the Doughnuts:

  • 2 1/4 tsp active dry yeast
  • 1/2 cup warm milk (about 110°F/45°C)
  • 1/4 cup granulated sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 2 large eggs
  • 1/4 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • Vegetable oil for frying

For the Creamy Filling:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened

For the Red Glaze:

  • 1 1/2 cups powdered sugar
  • 2 tbsp milk (or more for desired consistency)
  • 1/2 tsp vanilla extract
  • Red food coloring (optional, for the bright red color)

Instructions:

1. Prepare the Doughnuts:

  • In a small bowl, dissolve the yeast in the warm milk with the granulated sugar. Let it sit for about 5 minutes until it becomes foamy.
  • In a large bowl, whisk together the flour, salt, and nutmeg.
  • In a separate bowl, beat the eggs, butter, and vanilla extract together. Once the yeast mixture is ready, pour it into the egg mixture.
  • Gradually add the wet ingredients to the dry flour mixture and stir until a dough forms.
  • Turn the dough out onto a floured surface and knead it for about 5-7 minutes until smooth and elastic.
  • Place the dough in a lightly oiled bowl and cover it with a clean kitchen towel. Let it rise in a warm place for about 1 hour, or until it doubles in size.

2. Shape and Fry the Doughnuts:

  • Punch the dough down and roll it out on a floured surface to about 1/2-inch thickness.
  • Use a round cutter (about 3 inches) to cut out doughnut shapes, then use a smaller cutter to make the holes in the center.
  • Let the doughnuts rest for 30 minutes while the oil heats.
  • In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Carefully drop the doughnuts into the hot oil, frying a few at a time for about 2-3 minutes per side, or until golden brown.
  • Remove the doughnuts from the oil and place them on paper towels to drain excess oil.

3. Make the Creamy Filling:

  • In a chilled bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  • In a separate bowl, beat the cream cheese until smooth.
  • Gently fold the whipped cream into the cream cheese mixture until it’s fully combined and creamy.

4. Make the Red Glaze:

  • In a bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add a few drops of red food coloring to achieve the desired color and consistency.
  • If the glaze is too thick, add more milk, one tablespoon at a time.

5. Assemble the Doughnuts:

  • Use a piping bag fitted with a round tip to inject the creamy filling into the center of each doughnut.
  • Dip the top of each doughnut into the red glaze and let the excess drip off.
  • Place the glazed doughnuts on a wire rack and allow the glaze to set for a few minutes.

6. Serve and Enjoy!
